Pumpkin Soup





Serves 4


  • 750g chopped pumpkin
  • 1 large onion, diced
  • 100g chopped smoked bacon
  • 150ml white wine or sherry
  • 600ml veg or chicken stock
  • Cream and maple syrup to taste


Gently heat olive oil and butter in a saucepan and add the onion, bacon and pumpkin.  Cook carefully for about 5-7 minutes, add sherry or wine and cook for a further 2 minutes.  Add the stock and simmer until pumpkin is soft.  When done, allow to cool for a little then blend well.  Serve with cream and a little drizzle of maple syrup.
